How to Dehydrate Cucumbers

Dehydrated cucumber chips are a fun, crunchy snack that you can make at home without any frying or oil.

Leave out the seasonings and you’ve just got, plain dried cucumbers for versatility.

How to Dry Cucumber Chips

What type of Cucumber toUse?

Any cucumber will dehydrate. I used up some pickling cucumbers. However the nice straight english cucumbers have less seeds and would likely dry nicely.

Preparing your cucumbers

  • Start by washing fresh cucumbers thoroughly. Peeling is optional—the skin adds color and nutrients. No pretreatment is necessary, no blanching or soaking required here!
  • Slice or dice cucumbers into 1/8-inch thick slices for even drying. Pat slices dry with a paper towel to remove excess moisture.
  • Spread cucumber slices in a single layer on dehydrator trays.
  • Season if desired. This is where you can sprinkle on some salt, garlic powder or seasonings if you desire. Spritz with some vinegar for a tangy treat.

Tip: How to Sweat Cucumbers

Here is a tip to keep your dehydrating time down. Lightly salt thin slices and let them sit in a colander 30–40 minutes to draw out moisture. Rinse or leave salt on for a salty chip. Blot dry and lay out on dehydrator racks.

Dehydrator (Recommended)

  • Temperature Setting: 125°F
  • Drying Time: 5–10 hours

  • Time to dry can vary greatly. Remember times given are estimates! Humidity, size of slices, seeds or no seeds, all these and more can change things.
  • Turn the slices about halfway through the drying process to prevent sticking to the tray.

Texture When Dry

Cucumber chips should feel crisp. If they are “bendy or leathery” let them dry longer.

Conditioning

Conditioning is simply a time period before storage where you observe your dried food in a clear mason jar to watch for moisture.

Place dried cucumbers loosely in a jar 7–10 days. Shake daily and check for moisture. If condensation appears, return slices to the dehydrator. If mold appears… sorry but you are best disposing of this batch and try again.

How do I store cucumber chips to keep them crisp?

Store in an airtight container in a cool, dry place for the best shelf life. Glass jars work great.

FAQ – Why are my cucumber chips soggy?

Humidity is the biggest enemy to dried chips! If your chips end up getting soft later, (it happens to me too) you can always pop them back into the dehydrator to crisp them up again.

Do not try to re-dry any that have mold.

Prep Tips

Thinner slices work best for crisp chips. A sharp knife works fine but food processor or mandolin slicer.

Use a food processor to slice evenly.

Oversized cucumbers with lots of seeds will dry, but it is much nicer if you remove the seeds. Cut the cucumber in half lengthwise, scoop out the seeds with a spoon, then slice into half rounds.

Oven or air drying alternatives

Oven Drying

Set the oven to its lowest temperature and use parchment paper on trays to prevent sticking. Keep the oven door slightly open for airflow and check frequently. I read that 3-4 hours in the oven will do it. (Honestly that seems short to me. Let me know if you try it!)

I don’t generally recommend oven drying. It seems very inefficient to me. But if you don’t have a dehydrator, it would work.

Air Drying

I also don’t recommend air or sun drying due to the high water content of cucumbers. Now having said that, if you:

  • live in a very dry climate,
  • it is nice and warm,
  • you have a nice breeze blowing consistently,

you could try it. Just watch them carefully.

  • Enjoy as a snack, seasoned or plain.
  • Use a blender to grind into cucumber powder to add nutrition to other foods.
