Question today is from Martha. Her question is, “Can I safely can apples by water bath without sugar? I used apple juice before, and they turned out great with no syrup at all.”

Yes, absolutely! You can use apple juice or white grape juice. Either one of those are a great substitute for water and sugar syrup. It will still keep the apples sweet but won’t add refined sugar. A tart apple like granny smith combine wonderful with naturally sweet juices.

What About Canning Apples in Water?

Yes, it is technically safe to can apples in just plain water. I hesitate when I say that because honestly, I don’t think it’s going to taste very good. Apples are juicy. When you process them in just water, it’s going to pull the juice (and the flavor!) out of those apples and into the water. Your apples will be bland. I think they will be poor quality, but it is safe so you might want to try it.

Canning Apples Without Sugar

You don’t have to use refined sugar when canning apples. There are several safe options—each with a slightly different result in the jar.

Apple juice or white grape juice

A great substitute for sugar syrup. These juices add natural sweetness and help the apples keep better flavor and texture. This is usually the best choice if you want good quality without added sugar. Just sub in for water. (I haven’t tried it but I’ve read that pineapple juice is great too. Might take over the apple flavor.)

Plain water

This is safe, but not ideal. Apples are naturally juicy, and during processing their flavor leaches into the water. The apples often end up bland and soft.

Honey (instead of sugar)

Honey works well if you enjoy its flavor. Use a light-colored, mild honey so it doesn’t overpower the apples. Strong honey flavors can take over the jar.

If you want the best balance of flavor and quality, juice-based sweeteners tend to give the most satisfying results.
