Choose ripe strawberries. Do not use overripe, green or damaged strawberries.
Strawberries
Wash, remove stem and any unripe or damaged portions.
Cut into 1/2 inch slices. Small strawberries can be sliced in half lengthwise.
Lay out on dehydrator trays in a single layer. Halved strawberries should be cut side up.
Dry at 130 to 140 degrees F.
Drying time will depend largely on the size of your pieces, the temperature and air circulation of your dehydrator.
Estimated time to dehydrate 7-15 hours for slices. 12-24 hours for halved berries.
Strawberries will be pliable and leathery when done. No signs of moisture should show. Allow strawberries to cool, then condition before packaging for storage.
How to condition your dried strawberries.
Allow your dried strawberries to cool to room temperature. Place in a mason jar and seal the lid. (Do not vacuum seal)
Turn the jar upside down on the counter for 5 days.
Once a day turn the jar and inspect the contents. Do not open.
Watch to see if any condensation occurs on the jar, lid or strawberries.
Watch for fruit tending to stick together, this can indicate moisture if they can not be easily dislodged.
Watch for mold. If any mold occurs you should discard the fruit.
If there is any sign of moisture, simply put the strawberries back in the dehydrator for a few more hours. (Assuming there is no mold)
After second dry time, condition again.
When no moisture is apparent you can package for storage.
Packaging for storage.
Use sealed air tight containers.

Notes
NOTES:Vacuum sealing and/or oxygen absorbers are optional. If storage will be short term.Freezer bags will work just fine.
