How to Make Homemade Tomato Juice for Canning
Homemade tomato juice for canning in either a water bath or a pressure canner, or frozen.

Stock Pot
I use my stainless steel canner as a stock pot. Two uses, one pot!
Food Mill
Large Pot
to catch juice from your food mill
Potato Masher
Ingredients

Tomatoes
will make approximately 7 quarts
Lemon Juice
2 Tablespoons per jar needed when you process them
Instructions
First wash tomatoes. Just give them a good rinse in a colander.
Then you'll cut out the stems, and cut off any bruises or damaged portions.
Cut them up into quarters, bring a single layer to a boil in a large saucepan.
Add the rest of the tomatoes to the pot keeping the mixture boiling. When all tomatoes are added simmer for 5 minutes.
Remove the peels and seeds with a food mill.
Reheat tomatoes.
Proceed to follow canning directions for a pressure canner or a water bath canner. Or you can freeze.
Notes
Tomato juice can be processed in either a water bath or pressure canner.
It can also be frozen.
