Dehydrating Zucchini
Dehydrating zucchini either in chips or pieces is a great way to preserve it. Dried zucchini instructions here!

or mandolin slicer

Ingredients
Zucchini
or summer squash
Seasonings
optional
Instructions
Zucchini Chips
Slice squash into very thin slices (1/8”).
Lay slices in a single layer on dehydrator trays.
Sprinkle with seasoned salt.
Dry at 125 degrees until dry and crispy, removing slices that dry earlier than others.
Diced Zucchini
Scoop out centers of zucchini.
Cut each zucchini into lengths, and then into evenly diced pieces.
Blanch for 3 minutes.
Spread on dehydrator trays and dry at 135 until crispy and dry, 5-10 hours.
Store in an airtight container.
