Skillet Sweet Potatoes and Sausage. An easy one pot meal with freeze dried ingredients.
Working with freeze dried foods is so easy. NO chopping!
The first thing you'll need to do is refresh the freeze dried ingredients. When I made this dish I started it an hour or so before dinner. I placed the freeze dried ingredients in separate containers and added just enough water to refresh. (follow the instructions on the can). I then set them aside until it was time to actually start the hash.
Next time I'll just leave them all in one container... no reason to use separate. :)
The bottom container holds sweet potatoes, middle container has peppers and onions, next is the sausage, and finally I went ahead and measured out my spices in the top little jar.
You could also do this as a jar meal, place all ingredients in a jar for your pantry.
Or for a great camping recipe place all ingredients in a ziplock bag to take with you.
When you are ready to start your skillet sweet potatoes, heat up a frying pan with 3 T oil (my favorite is bacon grease for this recipe but olive oil works great too). Drain off any excess water from your ingredients and add your ingredients to the skillet.
Add in the spices; paprika, salt, pepper, red pepper flakes. Stir to distribute seasoning. Reduce the heat to medium and continue to fry until the potatoes are nice and browned.
The trick to this is: Don't stir too often. Let it fry until the bottoms are browned then gently flip. Repeat 2 times.
Substitute bacon pieces instead of the sausage. Or use regular potatoes instead of sweet potatoes. Or even leave out the meat altogether.
