How to make Orange Muffins for a treat.
Add a sprinkle of brown sugar on top or add a dollop of orange marmalade in the center of each muffin.
Ingredients:
- 1 egg
- 1/2 cup orange juice
- 1/2 cup orange marmalade
- 1/4 cup milk
- 1/4 vegetable oil
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/3 cup sugar
- 2 T brown sugar (approx)
Some optional ingredients are Cinnamon for sprinkling on top, or orange marmalade, put a dollop in the center of each muffin…. you have to try this!

Beat one egg in a large bowl. Stir in orange juice, orange marmalade, milk and oil.
Add the flour, baking powder, salt and sugar. Stir only until moistened.
Grease muffin cups. Fill your muffin cups 2/3 full.
An optional step is to place a tsp or so of orange marmalade in the center of your muffin.
To do this fill your cups 1/2 full. Place a small dollop of marmalade on top and then add batter to cover marmalade. Muffin cups should be about 2/3 full.
Sprinkle a bit of brown sugar on each muffin. Do you like cinnamon? Mix 1 tsp cinnamon with 2 T brown sugar. Sprinkle this on each muffin instead.
Bake at 400 degrees F for 20 to 25 minutes. Or until tops are lightly browned.
