Made with ham bone, home canned tomatoes, home canned chicken broth.
There are lots of ways to make slow cooker or crock pot baked beans. This recipe is very easy and uses only a few ingredients. Great for cooking on a budget it uses only a small amount of meat or no meat at all.
Save your ham bone from a ham dinner. Get a second meal.
Ingredients
- 2 cups dried beans – pinto beans, red or kidney beans
- 1 ham bone (save your bone with a bit of meat left over from a ham dinner)
- 1 Onion- chopped
- 1 quart homemade chicken broth.
- 1 quart home canned tomatoes – whole, halved or even pureed would work.
- Salt -to taste
- Water
- 2 T bottled lemon Juice
Rinse beans and cover with water. Add 2T bottled lemon juice. Cover and let soak all day or overnight. NOT cooking just soaking. I usually soak this right in my crock pot or slow cooker. I will be cooking it in the cooker so I don’t see a need to get another pot dirty.
Next you will drain the beans and addd ham bone, any bits of meat, and chopped onion. Pour in 1 quart canned chicken broth, add enough water to cover. Cook on low until beans are mostly cooked but just a bit crunchy. Time will vary. I’ll cook most of the day. 5-6 hours.
Now add 1 quart of home canned tomatoes to cover beans. Add more canned tomatoes if you need it to get the beans fully covered. Cook on low again for several hours until beans are soft and done. Add water as needed to keep beans covered.
Actual cooking time will vary according to your beans.
Taste and add salt if needed. This will depend on your ham bone. The leftover ham may have enough salt.
Your house will smell great all day and your dinner will be ready when you are. Remove the ham bone just before serving.
These crock pot baked beans take lots of time but not a whole lot of labor!
