What's Happening

The holidays are over and we are well into the cold and flu season here.

So far my family has avoided any colds this season!  I honestly believe that our lifestyle of eating homegrown foods as much as possible has a lot to do with it.  

Now watch what happens.... since I've proclaimed this to a couple of hundred people reading this newsletter.... the kid's will get sick.  But even when we do fall ill we seem to recover quickly.  My kids have not been to the doctor in years!  

As soon as anyone gets the least bit sniffly, I break out the chicken broth and push hand washing.  REALLY push hand washing!

Did you save your turkey carcass?  I did.  It is in my freezer ready for a day of making turkey broth.  If you are planning on doing this you can use the same recipe as chicken broth.  Very easy and very healthy.

Simple Recipe of the Month

Here is one great way to use chicken (or turkey) broth.
Rice and Carrot Side Dish

1 quart  chicken broth
2 cups rice
2 tsp salt (more or less to taste)
2 cups sliced carrots (uncooked, not canned)
1/2 - 1 cup grated cheddar cheese ( I prefer sharp cheese)

Bring chicken broth to a boil
Add rice, salt and sliced carrots.
Simmer for 15 minutes. Or until water has been absorbed.
Give it a quick stir to mix the carrots into the rice. Add cheese on top and place the lid back on until the cheese melts.  Serve.

Easy and healthy.

Tips

Chicken Broth ~ 5 ways to help prevent a cold or flu.... and it works! Providing you are using "real" chicken broth.  
  1. Substitute chicken broth for water when you make rice for any meal. It adds a rich flavor and nutrition.
  2. Pour chicken broth over a pork roast in the crock pot. Boil it 10 minutes before adding it to your slow cooker.  Thicken the broth with flour or cornstarch just before you eat to make a great gravy!
  3. Use chicken broth with ramen noodles for lunch. Boil 10 minutes before adding the ramen.  Add some meat and a side veggie and you are good to go.  My kids LOVE ramen noodles. 
  4. Use real chicken broth as a soup base.  Add whatever veggies and meat you like.  Stir in some noodles and you have a healthy version of the store bought stuff.  
  5. When making broth boil it down longer to make a strong broth and then freeze in ice cube trays.  Use whenever you need just small amount.  
Remember to boil your broth for at least 10 minutes before you eat it. This is an added safety precaution recommended by the USDA.
