Pickled Carrots and a Metal Residue

I was making a batch of pickled carrots and kept the jars in the water bath to keep them hot. After I processed them I found that the outside of the jars had a powdery substance on them.

Now I am concerned that the the substance must be inside the jar as well. It must come from the rack I am using. Will the carrots be O.K.?

Hi Karen,

My first instinct is that maybe the powdery substance is deposits from hard water. I occasionally get this but it is usually when I pressure can something I get a ring on the outside of my jar.

I don't believe it would have gotten in your jars as long as the water you put in initially was clean. The jar lids should have sealed it out.

However, I am not certain enough of this to give you a recommendation.

I would suggest you call your local extension. They may be aware of something in your water in your area that you'd need to be aware of.

If it turns out it is from your rack you can order a new rack easily. My rack was rusted so I ordered a new one with no problem.

Powdery substance on jars

I get this too. I have hard well water. It never goes inside the jars. As long as there is the proper seal I've never had a problem. The hard water deposits wash right off
