Can I substitute ground allspice for whole?

Yes! While I have not done this with my pickled beets recipe I have with other recipes. I'd definately lower the amount. Don't put in a tablespoon of ground allspice!

I'd estimate 1/2 tsp ground. Possible more depending on how much you like allspice. This is to taste and would not affect the safety of the recipe. You can experiment with it a little.

I'm getting ready to prepare my pickled beets recipe... probably sometime this week. I'll experiment myself and post back here.
