Hot Water Bath Canning with a Pressure Canner
I have a
pressure canner but not a water bath. Can I use the pressure
canner without the lid/seal to do my water bath canning for my
peppers?
I have about 2lbs of peppers how do I can them without
having enough to fill the waterbath/canner before they go
bad? Thanks

them into sections.

If you are canning
peppers you will need to pressure
can them. All
vegetables need to be processed in a pressure canner. If you
only water bath can them you are at risk of Botulism.

If you are making pickled peppers then it is safe
to
waterbath can them.
Yes it is ok to do hot water bath canning in your pressure canner to process foods, as
long as the food is safe to waterbath can.
The only requirement for
waterbath canning is that the water must be a couple of inches above
the tops of the jars.
Be careful though. If you set
the lid on your pressure canner and latch or screw it down it will
build up a small amount of pressure. Even if your valves are
open
and steam is escaping, pressure is inside. So be
sure if you set
your lid on top that it is loose so steam can escape freely.
As far as canning only 2 pounds of
peppers. It can be done however, it
would be a very small load. You'd probably only end up with a
pint or so. My suggestion if you won't be using them, or getting more
before they may go
bad is to freeze them.
Simply chop the peppers and freeze in freezer
bags. I do this often. The
peppers won't keep their texture but they are great for adding flavor
to
chili or casseroles.
