Canning Smoked Trout

I have already smoked and froze the trout but I would like to know if it is possible to can the fish still, and if so can I do it frozen or should I unthaw it?

I have not done this myself but I do know that it is safe to can thawed out meat. I can't imagine it would be any different for smoked fish that has been frozen.

Yes you will need to completely thaw the fish before packing into jars. You don't want to put frozen fish in a hot canner you might end up breaking the jars.

My only hesitation is the quality of the final product. When you are smoking fish for canning it is usually only partially cooked. The pressure canner cooks the fish the rest of the way.

Be aware that your smoked fish may dry out a bit. Let me know if you try it. I'd be interested to hear how it turns out.
