Canning on a flat top stove

Canning on a flat top stove. Is canning on my stove OK?

I have a flat top stove that is almost 3 yrs. old. I had heard at one point you can't can on this type of stove. The care/instruction book doesn't address canning. I called the manufacturer and they said if it isn't in there you can do it safely.

I guess I'm being hesitant, I don't want to crack the top. Are the newer flat top stoves okay to can on?

My family loves when I do peaches but I haven't done them since we bought this stove. Thank you. Dawn - WA

Hi Dawn,

I don't have any experience with flat top stoves, so I really don't feel qualified to advise you. I totally understand your concern! I have read differing opinions. Some say it is ok, some say not

The risk is cracking the top of your stove. The tops of the stove are made to be heated to high heats only right around the elements. If other areas are over heated they may crack. I've read that you may use a pot that is no more than 2 inches outside the elements area.

I wonder if the manufacturer would be willing to send a written letter stating that it is ok to use for canning and they would replace the top if it broke. I would be amazed if they would, but I guess it wouldn't hurt to ask.

Have you considered a different heat source? I'd love to have a sturdy propane stove that you could be set up outside. That might be an option.

I must say that the USDA does not recommend this. A stove like this may be unstable. Just be sure your stove is set up on a flat surface and is strong enough to hold the weight of the canner.
