 I'm Canning Applesauce and 
the jars are leaking.

I've been canning for a long time and I've never had a problem with the jars sealing.  Recently I was canning applesauce, and every jar leaked when I took it out of the hot water bath.  

I cleaned everything, used new lids, and reprocessed, and it happened again.  It's not a matter of not enough/too much headroom because I checked both times.  

I also checked to make sure there weren't air bubbles before processing. We did some raspberry jam and that worked fine.  

Any idea why the apples aren't turning out?

Hi Jen,

I'm stumped as to why it would do this now and you've not had a problem before. I am assuming you are hot water bath canning applesauce.

The only thing I can think of is maybe your jars are still too hot when you take them out of the canner. I had that happen to my peaches last week.

When I pulled the first jar of peaches from the canner it was hissing like crazy and juice was pushing out. I left the other jars in the open canner for about 2 more minutes and then took them out and had no problem.

Try opening your water bath canner and leave the jars on the rack for a couple of minutes and then take out your jars.

Let me know if that helps. I know how frustrating redoing 2 batches of applesauce must have been!
