Can you can any type of dry beans?



Hi Sara, Yes you are able to can any type of dried beans. I personally only have experience in canning pinto beans, navy beans and black beans.

The directions I have list "kidney, navy, pinto etc." The etc part leaves the options pretty much any dried bean.

Avoiding mushy dry beans

When I follow the standard recipes for canning dry beans (from the Ball Canning book and elsewhere), kidney beans, black beans, and garbanzos become too mushy to use on salads.

I've tried adding salt and acid (Fruit Fresh) to the soak and cooking liquids (since both salt and acid are supposed to delay softening) but neither made a noticeable difference.

BTW: the beans with Fruit Fresh tasted better--brighter. I used 1 tsp per pint.

Is there any way to get home canned dry beans to have the texture of commercially canned ones and still stay safe?

We always use our beans for soups, chili etc. I really don't use them on salads so I don't have any advice for you.

Possibly someone reading this will have experience with something to add to crisp up your beans.
