A simple life is the life for me. How about you?

I'm sitting here working on this letter to you with the sound of the pressure canner jiggling in the background. Green beans are in the canner and another load is waiting to go in as soon as these are done.

I am in full canning mode this month.  Peaches, beans, corn and beets,  are on my plate at the moment. My tomatoes are slooooowly getting ripe, and canning apples will be coming soon.  I love apple season!

Last month I mentioned that our garden is a bit puny this year.  God is good and I've found a great inexpensive source of green beans.  

We pick peaches from the same orchard every year.  When they found out that I am short on green beans they said they have an abundance... come on over.  Not free, but they are practically giving us these beans at rock bottom prices. (VERY nice people)  Canning those beans plus the ones from my own garden will suffice us for this year.  

Lesson?  Ask around, you never know where you may find what you need. I found green beans at the peach orchard.... go figure.

Simple Recipe of the Month

Are you over-run with cherry tomatoes?  Here is a great way to use them up.  

Roast Chicken with Cherry Tomatoes.  

4 cups cherry tomatoes, washed and stemmed.
1/4 cup olive oil
4 cloves garlic
1 tsp crushed red pepper, more if you like spicy, less if you don't
2 tsp caroway seed - or seasoning of your choice
Chicken - I use 8 drumsticks (for the boys) and 1 breast (for me!)


Preheat oven to 450 degrees.  Place chicken in baking pan.  Roast for 30 minutes. (This is assuming you have bone in chicken.  If you have chosen bonless chicken you won't need as much cooking time so skip this pre-cooking step.)

Toss tomatoes with olive oil, garlic, red pepper, and caroway.  

When chicken has roasted for 30 minutes, remove from oven.  Pour tomato mixture over chicken.  Tomatoes will lie between and around the chicken pieces.

Sprinkle with salt and pepper to taste.  

Place back in oven and roast until chicken is done.  (about 30 more minutes)  Serve with rice or buttered noodles if you choose.  

Yum!  

Home Canning Question  


Sometimes liquid is lost from your jars during processing.  This might mean you had incorrect head space.   Or possibly you did not get out air bubbles before putting on the lids.  It happens to me on occasion as well.

As long as you used the correct processing pressure, time and method  you should be ok. 

If however liquid loss is extreme you'll want to reprocess withing 24 hours or go ahead and freeze your product.

Do a search for "bulk canning jar lids". They have a great deal on these.

The bulk lids are a generic lid with no brand name. They come wrapped in brown paper sleeves. Works for me.

They also have a full line of canning equipment and lots of other fun stuff.

Grain mills, butter churns, dehydrators, apple peelers, cider presses, kerosene lamps, wind up radios, dairy supplies, poultry etc. Just about anything you might need for self suffieciency.

I also saw a wood fired canner. You use it out doors and build a fire underneath. I've never seen anything like it.

Kitchen Tips

My tip for the month. Have a drawer in
your kitchen designated the canning drawer.


Included you can see my canning funnel, jar lifter, magnetic wand, weight for my pressure canner, some freezer bags, canning lids, sure jel, masking tape. The tray on the left holds rings.

Hmmmm my sharpie is not there. Usually I keep one for marking my jars.

My canning record book lies right on top of all this stuff. This way it is all in one place and you don't have to go looking for everything each time you are going to work.
